Cucumber Potato Salad Print E-mail

Silky soft boiled potatoes meet crisp and crunchy cucumbers in a vinegar mustard dressing.

Image INGREDIENTS
2 lbs. potatoes, cubed
1/4 cup olive oil
2 Tbsp. apple cider vinegar
2 Tbsp. grainy prepared mustard
salt and pepper, to taste
1 large cucumber
parsley, for garnishing


DIRECTIONS
1) Boil potatoes for about 5 minutes, or until just tender.
2) Meanwhile whisk oil, vinegar, mustard, and salt and pepper in large serving bowl.
3) Drain potatoes and add to dressing. Once cool, cover the bowl with plastic wrap and marinate at least 2 hours, stirring occasionally.
4) Just before serving, dice cucumber, add to potatoes, and toss. Top with parsley and serve.

Makes 6 servings.
