Also, most of our recipes can be easily morphed into vegetarian recipes, like our Baked Potato Soup, Nicholette's Speedy Enchiladas, Burrito Casserole, Lasagna, Picnic Potato Salad, or Barley Jambalaya. Simply omit the meat suggested, or replace it with beans or meat alternatives. You can also replace any beef or chicken stock with vegetable stock.

"What do you mean by dairy-filled?"
A lot of the lactose free ingredients we use are real dairy items. The lactose has simply been removed or reduced drastically. So you're still consuming dairy, just not lactose!
"Aren't there plenty of lactose-free cookbooks? Why did you write this one?" When Mandy was diagnosed with lactose intolerance, she was blind-sided by the plethora of foods she could no longer consume. She tried many of the other cookbooks out there, but most of the recipes call for soy, rice, or tofu alternatives, which just do not taste the same as dairy. With some intense research, she was able to find new alternatives on the shelves, many that most cookbooks do not mention. It took her almost two years to compile a treasury of yummy recipes that no longer caused her pain. She intended on binding the recipes and handing them out as gifts to her friends and family, because they seemed to be at a loss as to what they could cook for her when she came to visit. She and her good friend Monika decided to take the idea one step further and make the recipes available to everyone, thus Lactose Free and Loving It was born.
