Chocolatey goodness in a cup! From Williams-Sonoma Kids Parties.
INGREDIENTS
Whole milk 2 qt
Unsweetened cocoa powder ½ cup
Sugar ½ cup
Peppermint extract (essence)
2 teaspoons
DIRECTIONS
1) In a saucepan over medium heat, warm the milk until small bubbles appear around the edges of the pan. Meanwhile, in a small bowl or cup, stir together the cocoa powder and the sugar, breaking up any lumps, then stir in the peppermint extract. Add about ¼ cup (2 fl oz/60 ml) of the milk to the cocoa powder mixture and stir until blended.
2) Just before serving, stir the chocolate mixture into the hot milk. Divide the cocoa evenly among 8 mugs. Serve hot.
Serves 8
Topping Suggestions: Garnish each serving with a sprinkling of miniature marshmallows and a peppermint-stick straw, or with a dollop of lightly sweetened whipped cream and
a sprinkling of crushed peppermint candies. To coat the rim of each mug with crushed peppermint candies before filling, brush the rim with simple syrup (1 part sugar dissolved in 1 part boiling water), and then dip the rim into a saucer of crushed candies.
