Golden, crispy, delicious...what more could you ask of harvest potatoes?
INGREDIENTSsmall golden potatoes
vegetable oil
salt and pepper, to taste
DIRECTIONS
1) Preheat oven to 425 degrees F.
2) Peel potatoes and cut in half, then add to a pot of slightly salted boiling water. Boil until just cooked, about 7 minutes. Do not over cook.
3) Pour potatoes into a colander and allow to cool.
4) Meanwhile, pour a thin layer of vegetable oil into a roasting pan. Place the pan in the oven and heat until the oil is sizzling.
5) Once the potatoes are cool, shake them in the colander until the outsides are roughed up. Sprinkle with salt and pepper.
6) Remove the roasting pan and add the potatoes. Baste with the oil, then return the pan to the oven. Roast for 20 minutes.
7) Turn potatoes over, then roast for 20 minutes more. The results are excellent, crispy, golden roasted potatoes!
